Recipe #2- Medley Breakfast Burrito

*For most of my recipes, the ingredient amounts are not given as it is completely up to you (and your taste buds) how much to use or make. Please think of them as suggestions, delicious suggestions that I make for my family on a daily basis.
Ingredients:
- A jar of your favorite medley
- Eggs
- Shredded hashbrowns
- Shredded cheese
- Tortilla(s)
- Onion (diced)
- Bell peppers (diced)
- Bacon or chorizo (OPTIONAL)
Prepare your hasbrowns according to the package's instructions. Personally, I just throw some butter in a pan, sprinkle in the amount of hashbrowns I prefer from a frozen bag, and cook them until they are golden brown and a tad crunchy, just to my liking. *IF YOU ARE MAKING A VEGETARIAN BURRITO, SKIP STEP 2 AND GO DIRECTLY TO STEP 3!
While your hashbrowns are frying, use another burner to cook your meat (if added meat is your preference). Place either your chorizo or bacon in an ungreased pan and leave it until the meat is cooked through. You will have to flip your bacon halfway through and you will have to prepare your chorizo the same you would ground beef. Set aside when complete.
Fry your onion and bell peppers in a small pan with a little butter until soft and fragrant. Set aside.
Either in a bowl or directly in your pan, mix together your eggs, cheese, and about a teaspoon or so of your favorite pepper medley. Once your mixture is well combined, scramble your eggs on a medium low setting until they are nice and fluffy.
While you are scrambling your eggs, warm your tortilla up in the microwave for about 20-30 seconds so that it is easy to fold.
Once your tortilla is nice and warm, place your shredded hashbrowns, your onion and bell pepper mixture, your eggs, some extra cheese, and your meat (if this is not a vegetarian burrito) in the middle of the tortilla. Fold the bottom half of the tortilla up and roll it from one side to the other.
Take a bite and enjoy!
Pro Tip- If you prefer a quick and easy breakfast as I do, buy your hashnrowns, onions and bell peppers in pre-prepared frozen bags. The onions and the bell peppers are almost always already sliced or diced depending on your preference. In addition, this way you can just take out the amount you want for your meal, roll the bag up with a rubber band around it, and put it back in the freezer for another day!
